Fresh Pineapple Salad

1 ripe pine apple de-skinned and chopped into bite size pieces
1 head green cabbage sliced into thin slices
6 cups fresh spinach
2 carrots julienned
2 tomatoes deseeded and chopped
salt and freshly cracked pepper to taste
favorite salad dressing
1.) Combine all ingredients in a large bowl and mix well.
2.) Just before service, pour your favorite dressing over salad.
3.) Toss salad to coat well with salad dressing. (Use dressing sparingly)
4.) Serve with your favorite grilled protein for a wonderful dinner!
Balsamic Herbed Dressing:
¼ cup balsamic vinegar
½ cup extra virgin olive oil
1 tbsp Italian Herb Blend
1 tbsp Dijon mustard
1 tsp sugar
2 tsp freshly cracked pepper
1 tsp salt
1.) To make the dressing, place the dressing ingredients into a pint size glass jar that has a sealable lid. I like to use a Mason Jar.
2.) Place a lid on the jar and shake ingredients together to mix. Set aside until ready to use.
