Flank Steak with Avocado Salsa

3 avocados, peeled, pitted, and diced
1/2 cup finely chopped red onion
3 roma tomatoes, seeded, diced
2 garlic cloves, minced
1 cup chopped cilantro
1 tsp red pepper flakes
1/2 tsp smoked paprika
zest from 2 limes
juice from 2 limes
1/4 cup olive oil
salt and pepper to taste
1.) Combine the avocado and tomato salsa ingredients together in a large bowl. Salt and pepper to taste and set aside until ready to use.
Seasoning for Flank Steak:
1 - 2 pound flank steak
1 tbsp ground cumin
1/2 tsp crushed red pepper flakes
2 tsp ground coriander
1 tbsp chili powder
1/4 tsp ground cinnamon
pinch ground allspice
salt and freshly ground pepper
1.) Mix all the spices together into a small bowl.
2.) Sprinkle the spice mixture over the flank steak and rub them into the meat.
3.) Allow the meat to sit for about 15 minutes and then grill for about 3 - 4 minutes on each side.
4.) The meat should still be pink on the inside (about 135 degrees internal temperature).
5.) Allow the meat to rest for 10 minutes and cut into thin slices against the grain.
6.) Serve on a bed of Mexican rice and the avocado salsa spooned over the top of the prepared steak. Enjoy!
