4 mini sweet peppers, rough chop
½ medium onion, minced
1tbsp. garlic, minced
1 lime zest juice
2tsp. red wine vinegar
3tsp. olive oil
Salt & pepper to taste
In a small mixing bowl, combine lime, vinegar, honey, olive and salt and pepper.
Cook quinoa by instructions on box. In a sauté pan, add mini peppers, onion, and garlic.
Toss dressing with quinoa and peppers.
