Italian Chicken Dinner

4 chicken breasts
16 slices of mozzarella cheese
2 small zucchini, sliced
4 large tomatoes sliced
1 cup fresh basil
1/2 cup fresh oregano
salt and pepper
1.) Cut 4 large squares of foil to wrap the dinners in and brush with olive oil.
2.) Lay the chicken breasts in front of you on a cutting board. Make 4 slashes across each chicken breast at even intervals. Place a piece of mozzarella cheese in each cut on the chicken breast.
3.) Divide the zucchini slices and sliced tomatoes between the 4 foil squares. Lay the chicken on top of the vegetables. Sprinkle with coarsely chopped fresh basil and oregano. Salt and pepper to taste and drizzle with about 2 tsp. of olive oil.
4.) Carefully fold of the foil edges and seal them shut to create a parcel. Place the prepared baking parcels on a baking sheet and into a 400 degree oven. Bake for approximately 30 minutes or until chicken is fully cooked.
5.) Remove the parcels from the oven and carefully open them. Serve with pasta or Klondike potatoes. Enjoy!
