Pizza Dough: (enough for 1 medium pizza)
2 cups cake flour
2 tbsp gluten
1/2 tsp salt
1/2 tsp yeast dissolved in 2 tbsp water
3/4 cup water (more or less)
tomato sauce (Recipe Below)
1/2 cup shredded parmessan
mozzarella cheese slices, prosciutto
1 can (28 ounces) whole tomatoes
2 tbsp Italian seasoning
2 tsp salt (or to taste)
2 tsp coarsely ground pepper
1.In the bowl of your food processor add the flour, gluten and salt. Pulse to combine the dry ingredients.
2.Add the yeast and water. Pulse until the mass has pulled into a soft dough. Allow the machine to run for 1 minute to knead. If needed add additional water or flour to pull the mass into a soft dough.
3.Remove the dough from the food processor and shape it into a ball. Place the dough in a large bowl that has been greased with olive oil. Rub the top of the dough with olive oil, cover with plastic wrap and allow the dough to proof for a couple of hours.
4.Once the dough has proofed removed from the bowl, turn out onto a floured surface and gentle shape into a round. Preheat your oven and a baking stone to 450-500 degree's.
5.Poor about 1 cup of tomato sauce onto the prepared dough and spread out on the dough leaving about 1/2 inch around the edges.
6.Sprinkle with parmesan cheese. Add 4 slices of mozzarella cheese, 4-5 slices of prosciutto.
7.Using a pizza peel, place the prepared pizza on a preheated baking stone and bake for about 10 minutes or until crust is golden and cheese is bubbling. Serve and Enjoy!
1. Place the ingredients in a large bowl and using a potato smasher, "smash the sauce together". Do not cook the sauce, whereas, the oven will finish cooking it perfectly.
