Baked Penne Pasta

1 package penne pasta cooked and drained
6 garlic cloves, minced
1 red bell pepper, diced
1 medium sized onion, diced
1 ½ cups ricotta cheese
1 cup parmesan cheese
2 tbsps Italian blend herbs
salt and pepper to taste
Extra Virgin Olive Oil
1.Sauté garlic, bell pepper, and onion in a large sauté pan with about 3 tbsps of extra virgin olive oil until fragrant.
2.Add pasta and sauté pasta for about five minutes. Remove from heat and set aside.
3.In a medium size mixing bowl, combine ricotta cheese, parmesan cheese, Italian herb mixture, and egg. Mix all together until well combined.
4.Fold sautéed pasta mixture into cheese mixture until combine.
5.Transfer pasta mixture to a large baking dish and place in a preheated 400 degree oven for about 20 minutes covered. Uncover and continue baking for about 10 minutes or until a nice golden color appears on top of the pasta. You could also broil pasta for a minute to create a nice caramelized crust on top.
6.Serve and enjoy.
