Italian Roasted Chicken Quarters

6-8 chicken quarters (leg and thigh pieces)
2 tbsp olive oil
1 tbsp Italian seasoning
2 tsp season salt
1 tbsp black pepper
1 tsp hot sauce
1 tbsp apricot preserves
1.Place the chicken quarters in a large bowl. If you choose, remove the chicken skin. I like to leave it on for flavor.
2.In a separate bowl, combine the remaining ingredients and mix together.
3.Pour the herb mixture over the chicken quarters and toss to coat throughly with the herb mixture.
4.Place the a cooling rack into a baking sheet and place the prepared chicken quarters onto the rack.
5.Roast the chicken in a 400 degree oven for about 45 minutes or until throughly cooked through.
6.Serve with roasted klondike potatoes and your favorite vegetable.
