Sweet and Sour Pork

4 cups cooked riced
1-2 pound pork tenderloin cut into inch cubes
1/4 cup water
1 20 ounce can pineapple chunks
1 small yellow onion, thinly sliced
1 green pepper sliced into strips
1/4 cup apple cider vinegar
2 tbsp soy sauce
1/4 cup brown sugar
2 tbsp cornstarch
2 tbsp water
salt and pepper to taste
1.) Heat a large skillet on the stove and add just enough oil to lightly coat the bottom of the pan.
2.) Add the pork and saute for 5-8 minutes or until pork is cooked through. Remove the pork and set aside.
3.) To the sauté pan, add the water, pineapple chunks and juice, onion, green pepper, apple cider vinegar, soy sauce and brown sugar. Bring to a boil and reduce the heat to a simmer. Simmer for about 5 minutes.
4.) Mix the corn starch with the additional 2 tbsp of water and add to the sweet and sour sauce. Stir to incorporate and continue simmer for an additional 3-4 minutes.
5.) Add the cooked pork back into the saute pan with the sweet and sour sauce. Stir to incorporate and cook and additional minute.
6.) Serve the sweet and sour pork over rice
