Garlic Lime Chicken with Red Pepper Flakes
As Aired on May 19, 2014
Recipe Courtesy Chef Bryan Woolley
4 chicken breasts, flattened
1/4 cup fresh lime juice
4 tbsp butter
1 tbsp minced garlic
1 tsp dried dill weed
1 tsp chopped fresh thyme
1 tsp red pepper flakes
salt and pepper to taste
1.) Heat a large sauté pan on the stove and add just enough olive oil to lightly coat the bottom of the pan.
2.) Add the chicken to the hot sauté pan and throughly cook through (about 6 minutes on each side).
3.) Remove from the chicken from the pan and add the fresh lime juice to deglaze the pan.
4.) Add the butter, minced garlic, dill weed, thyme, and red pepper flakes. Gently stir everything together while the butter is melting.
5.) Once the butter has melted and incorporated all of the other ingredients, add the chicken back to the pan and cook for about 1 minute on each side (making sure the sauce coats the chicken.
6.) Remove the chicken and place them on a serving platter. Drizzle the remaining pan sauce over the chicken breast.
7.) Serve with your favorite Klondike Potato dish and sautéed green beans.
