Apricot and almond filled pastry

1/2 cup apricot jam
1/2 cup ground almonds
1/2 tsp almond extract
1/2 cup powdered sugar
4 tbsp softened butter
2 packages prepared puff pastry
1 egg yolk
1 tbsp milk
1.) 0Preheat your oven to 425 degree's.
2.) In a large bowl, combine the apricot jam, ground almonds, almond extract, powdered sugar, softened butter, and eggs. Mix to thoroughly combine.
3.) Unwrap the prepared puff pastry and place one sheet in front of you on a lightly floured work surface.
4.) Spread the prepared filling on the puff pastry sheet leaving a 1/4 inch border. Place the second puff pastry sheet over the filling and press the edges together to seal them.
5.) Prepare the glaze my mixing the egg yolk and the milk together and brush the top of the puff pastry. Don't let the glaze get on the edges or drip down the side of the puff pastry because it will prevent it from rising.
6.) With the tip of a knife, make deep slanting cuts in the pastry about 1/4 apart and about 1/4 inch from the edges.
7.) Bake the pastry for about 30 minutes or until golden brown. Remove from the oven, if desired, dust with powdered sugar and serve warm with your favorite ice cream. Enjoy!
