4 chicken breasts, cut into pieces
1 bay leaf
1 tsp black pepper
1/8 tsp cayenne (adjust to your liking)
1 tsp paprika
1/2 tsp ground cloves
1 tsp ground cinnamon
1 onion, chopped
3 garlic cloves, minced
2 cups diced tomatoes
1 tbsp brown sugar
1 1/2 cups chicken stock
1/4 cup semi sweet chocolate chips
1/4 cup raisins
salt and pepper to taste
1. Heat a large pot on the stove and add just enough oil to lightly coat the bottom of the pan. Add the chicken pieces and brown. Remove the chicken from the pot.
2. Add the bay leaf, black pepper, cayenne pepper, paprika, ground cloves, cinnamon, chopped onion, and garlic. Sauté for a couple of minutes.
3. Add the diced tomatoes, brown sugar, and chicken stock. Bring to a boil and reduce to a simmer. Simmer for about 5 minutes and than add the chocolate chips and raisins. Stir until chocolate is dissolved.
4. Add the chicken back into the mole sauce and simmer for an additional 15-20 minutes. Serve with rice and your favorite vegetable. Enjoy!
