Fettuccine Pasta with a Tuscan Tomato Vodka Sauce

6 cups cooked fettuccine pasta
2 tbsp olive oil
1 small onion chopped
3 garlic cloves, chopped
2 pounds ground beef
4 cups freshly chopped tomatoes
1 cup chicken stock
1 tsp dried oregano
2 bay leaves
2 tbsp sun dried tomato paste
½ cup vodka
1 tsp sugar
¼ cup freshly chopped Italian parsley
¼ cup freshly chopped basil
Salt and pepper to taste
1.) Sauté onions and garlic in olive oil for 2 minutes add ground beef and brown.
2.) Add tomatoes, chicken stock, oregano, bay leaves, sun dried tomato paste, vodka and sugar. Simmer for approximately 30 minutes.
3.) During the last 5 minutes of cooking, add the fresh parsley and basil. Gently stir to incorporate. Simmer for an additional 5 minutes. Adjust salt and pepper to taste.
4.) Serve with fettuccine pasta.
