  • 2 pound thinly slice beef roast
  • 1 large onion thinly sliced
  • zest and juice from 3 limes
  • Salsa Queen’s salsa
  • fresh cheese (recipe here)
  • corn tortillas
  • 1 bunch freshly chopped cilantro
  • vegetable oil
  • salt and pepper to taste


Layer the thinly sliced piece of beef in a large baking pan. Start with the beef slices, onion slices, part of the lime juice and continue layering until finished. Be sure to add a little salt and pepper onto each layer.

Let the beef marinade for about 1 hour and than pan sear or grill the marinaded beef slices along with the onion slices until cooked through. Cooking time will vary depending on the method you use, just keep in mind the beef is thinly sliced and will cook very quickly.

When the beef and onions are cooked, place them on a large plater with lime slices, fresh herbed cheese and fresh salsa.

Serve family style so family and friends can build there own or make the tacos individually. Enjoy!
