2 cans chickpeas, drained and rinsed

1 red bell pepper, diced

1/2 red onion, diced

1/4 cup chopped fresh parsley

1/4 cup chopped fresh cilantro

1 small cucumber, peeled and sliced

3 celery stalks, chopped

1 cup cubed cheddar cheese (bite size cubes)

3 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon sugar

8 cups mixed greens

Salt and pepper, to taste


1) In a large bowl, combine the chickpeas, red bell pepper, red onion, parsley, cilantro, sliced cucubmer, celery and cheddar cheese cubes.

2) In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper.

3) Pour the dressing over the chickpea salad mixture and toss to coat.

4) Divide the mixed greens between four plates and each plate with equal portions of the prepared chickpea salad.
