Looking for a quick and easy salad? Try this cilantro chicken salad with a lime dressing. You can substitute any type of protein for chicken if you prefer something else.
3 chicken breasts, cooked and cubed
2 iceberg lettuce heads, chopped
4 tomatoes, diced
2 cups chopped broccoli florets
1 bunch cilantro, chopped
1/4 cup fresh lime juice
1/3 cup olive oil
1/2 tsp cumin
1/4 tsp red pepper flakes
salt and pepper to taste
1) The chicken can be poached, grilled, baked, broiled…however you would like to cook it.
2) Add the cooked and cubed chicken to a large bowl along with the lettuce, tomatoes, broccoli and cilantro. Set aside until ready to dress.
3) To make the dressing add the fresh lime juice, olive oil, cumin, red pepper flakes, salt and pepper to a bowl. Whisk everything together to combine.
4) Pour the dressing over the salad, toss to coat. Serve and enjoy!
