INGREDIENTS
2 cups cooked and drained garbanzo beans
1/2 cup sun-dried tomatoes
1/3 cup tahini sauce
Juice from one lemon
2-3 tbsp extra virgin olive oil
2 garlic cloves
2 chicken breasts or 2 cups canned chicken
1-2 ripe avocados, sliced
1-2 tomatoes, sliced
4-6 large flour tortillas
Salt and pepper to taste
INSTRUCTIONS
1) For the sun-dried tomato hummus, combine garbanzo beans, rehydrated sun-dried tomatoes, tahini sauce, lemon juice, extra virgin olive oil, garlic cloves, salt, and pepper in a food processor. Puree until smooth and creamy. Set aside.
2) If using chicken breasts, grill them seasoned until fully cooked. Thinly slice and set aside.
3) Spread the freshly made hummus onto the flour tortillas on a work surface. Add slices of chicken (grilled or canned), avocado, tomato, and lettuce (if desired).
4) Roll up the tortillas like burritos.
