Cooking with Chef Bryan - Zucchini Noodle Greek Salad

Create this amazing greek salad for dinner or lunch. Using a veggie noodle machine to create zucchini noodles for a different twist on a great salad!

INGREDIENTS

5 cups zoodled zucchini

2 medium cucumbers, peeled and chopped pieces

3 medium tomatoes, chopped into bite size pieces

1/4 small red onion, sliced

1/4 cup pitted black olives

1/2 tsp dried oregano

1/8 tsp black pepper

2 1/2 tbsp red wine vinegar

2 tbsp olive oil

2 tbsp reduced-fat feta cheese

INSTRUCTIONS

1) I like to use my machine that turns the zucchini into noodles but you can also place a box grater into a large bowl and grate enough zucchini for about 5 cups.

2) Prepare the remaining vegetables: Peel the cucumbers and chop into bite-size pieces and add to the bowl. Chop the tomatoes into bite-size pieces, slice the red onion, and chop the olives or leave them whole. Add everything into a large bowl.

3) In a small bowl, add the dried oregano, black pepper, red wine vinegar and oil. Whisk together with a fork and pour the dressing over the salad and toss everything together.

4) Serve and sprinkle the top of the salad with feta cheese. Enjoy!
