(KUTV) We're in the kitchen with Kasthuri Kateel from Cupcakes by Kasthuri and she's making cupcakes that your taste buds and waistline will love.Dark chocolate cupcakes with ganacheIngredients:1 cup (2 sticks) unsalted butter 3/4 cup best quality unsweetened cocoa2 cups unbleached all-purpose flou1/8 teaspoon salt1 teaspoon baking soda 1/2 teaspoon baking powder1 teaspoon good quality vanilla extract2/3 cup unbleached organic sugar2 large eggs2/3 cup Greek yogurt1 cup hot waterDirections:1.) Preheat oven to 350 degrees F.2.) Line 2 standard cupcake pans with 24 liners.3.) Sieve flour, salt and baking soda in a large bowl. Keep aside.4.) Mix hot water and cocoa. Keep aside.5.) Cream butter and sugar till fluffy.6.) Add one egg at a time in the butter. Add in Vanilla extract.7.) Add Greek yogurt to the mixture.8.) Slowly add water and cocoa mixture. Combine on low speed.9.) Slowly add flour combining on low speed until completely incorporated. Do notovermix10.) Fill baking cups three-fourths full. Add a quarted strawberry in the middle11.) Bake for about 18 minutes. Cool before dipping in Ganache.GanacheIngredients: 3/4 cup bittersweet chocolate, cut into small pieces 3/4 cup heavy whipping cream2 tablespoons unsalted butter1 tspn vanilla extractDirections:1.) Use a double boiler or a pot on a stove with water. Place a smaller bowl on the pot, makesure that the pot does not touch the water. 2.) Pour in the cream and add chocolate, butter and vanilla. Whisk well.
