(KUTV) — Backyard chickens are a growing trend. Consumers choose to raise laying hens for a variety of reasons including the belief that the eggs are a healthier and safer option. But is this true? Sara Browning, Registered Dietitian Nutritionist at Intermountain McKay-Dee Hospital says the short answer is yes.
-Free Range Egg Health Benefits Eggs: Produced from hens that range outside have significantly higher levels of vitamin D, with some evidence that Vitamin D levels peak in the summer. Yolks produced this way are also bigger, more flavorful, and a much deeper orange color indicating higher nutrition content.
-Producing Free Range Eggs Safely: Any time we are handling eggs, salmonella infection is a concern. There is some disagreement about whether washing causes more harm than good. A good rule of thumb is, if they are clean, free range eggs can safely be stored unwashed, and then washed just prior to use. Once washed, eggs should always be stored in the refrigerator.
